- 1 packet of Penne pasta (500g)
- 2 tblspn chopped garlic
- diced onions (I used half an onion)
- chopped chillies x 1
- 1/2 capsicum, chopped
- sliced pepperoni
- 200g tomato paste
- 250 canned chopped tomatoes
- Basil ( I got mine in puree form)
- hot chilli powder
- parsley to garnish
Step 1: Boil a pot of water to cook penne pasta. Approx. 3 cups of water. Add salt for taste. Cook till al dente (soft but not soggy!) and drain the water. Set aside while you cook the sauce.
Step 2: In a frying pan, add oil, garlic, basil, onions, chillies and capsicum (in that order) and fry for one minute and then add the pepperoni. Fry for another 5 mins on medium heat.
Step 3: Add the chopped tomatoes, tomato paste and hot chilli powder and fry for another 1 minute to heat up the sauce.
Step 4: Pour sauce on pasta and sprinkle with parsley and eat while its hot!
